Named after ‘The Cutting’ a secluded but often turbulent beach a short drive from the distillery, this overproof gin allows a trio of myrtles (anise, cinnamon, and lemon) to really shine. A big aromatic profile is enhanced by using Boobialla – also known as native Juniper. A splash of southwest sea water straight from The Cutting adds a very slight salinity and savoury finish. Strong and wild, just like the beach.
